Sweetcorn, Courgette & Feta Fritters

By adding chunks of crumbled feta to my fritters, you get little pockets of intense flavour that make this dish so much more exciting to eat than your usual fritters. I like to top my fritters with a poached egg and almost use the yolk as a super rich dipping sauce.

Ingredients

  • ¼ courgette, julienned

  • ¼ tin of sweetcorn

  • 2 eggs

  • 2 tbsp plain flour

  • feta , crumbled

  • Small handful of rocket

  • Olive oil

  • Salt & pepper

Recipe

In a bowl, combine the courgette, sweetcorn, 1 egg, 2 tablespoons of flour and crumbled feta with plenty of salt and pepper. Spoon 4 patties onto a frying pan over a medium heat with a splash of olive oil. Fry each side for about 5 minutes until golden brown and cooked through.

Meanwhile, bring a pot of water to the boil and poach an egg by cracking it into a mug, very slowly lowering it into the water and then very gently tipping it out. Once cooked, remove with a slotted spoon.

Stack the fritters with some rocket and top with the poached egg.
