Roast Chickpea Salad
Chickpeas are such a versatile store cupboard ingredient, great for bulking out meals, but also they can be used as the main ingredient. Here I have oven baked them in olive oil and spices to create a crispy coating that gives this salad an amazing texture.
Ingredients
½ tin of chickpeas
1 tsp cumin
1 tsp paprika
Small handful of rocket
Small handful of feta, crumbled
Olive oil
Salt & pepper
Recipe
Pre-heat your oven to 190°c.
In an oven proof dish, add the chickpeas along with a generous glug of olive oil, 1 teaspoon of cumin, 1 teaspoon of paprika and season with salt and pepper. Bake for 30 minutes until golden brown and set to one side for a few minutes to cool down a bit.
To serve, mix with fresh rocket leaves, crumbled feta and a glug of olive oil.
