Cheese & potato hotpot
I’m using cheddar (because it overlaps nicely with a few other dishes in this book), but you can totally throw in any other interesting cheeses that you’ve got lurking in the fridge. This dish is a great template for using up leftovers, imagine adding a few layers of sunday’s roast chicken in there.
Ingredients
2 potatoes, very thinly sliced
1 onion, very thinly sliced
1 big handful of cheddar cheese, grated
1 tsp oregano
Salt & pepper
Olive oil
Recipe
Pre heat your oven to 190c
Grab an oven proof dish and start with a layer of potatoes, then onions, then cheese, and finally a little seasoning and a pinch of oregano. Repeat 4 or 5 times until the dish is full to the top and finish with a layer of potatoes. Drizzle over a little olive oil and bake in the oven for about 30 minutes or until the top layer is golden brown and the potatoes are all cooked.
