CHORIZO BBQ BEANS

This is one of my favourite brunches ever, smokey BBQ beans with chorizo on sourdough. It’s as hearty as a fryup but takes a fraction of the time and effort. After eating these you’ll realise that normal baked beans just won’t do anymore.

To make 1 portion

  • A few slices of chorizo

  • ¼ red onion, sliced

  • 100g cannellini beans (from a 400g tin)

  • 50g passata

  • Pinch of cumin

  • Pinch of smoked paprika

  • 1 tbsp tomato ketchup

  • Slice of sourdough

  • Olive oil

  • Salt & pepper

To cook

Pan fry the chorizo in a splash of olive oil over a medium heat for a couple of minutes then add the onions and continue to fry for a further couple of minutes until softened. Next add the beans, passata, cumin, paprika and ketchup, season and then simmer for about 5 minutes until the sauce is thicker and stickier. Meanwhile, lightly toast your bread and then pour over the BBQ beans, garnishing with some cracked black pepper.
