Farmhouse Tofu Rice

This quick and easy savoury rice dish is a warm and comforting recipe that highlights just wow versatile tofu can be. 

To make 1 portion

  • ½ mug brown rice

  • 1 mug water

  • ½ vegetable stock cube

  • ½ red onion, roughly diced

  • 100g tofu, cubed

  • ½ carrot, roughly diced

  • Small handful of pine nuts

  • Small handful of kale, roughly chopped

  • Salt & pepper

  • Olive oil

To cook

First cook the rice but adding ½ a mug of brown rice, 1 mug of water and ½ a stock cube to a saucepan. Bring to the boil and simmer with the lid on for about 10 minutes until all the water has been absorbed and the rice is cooked.

Meanwhile, pan fry the onion in a splash of olive oil for a few minutes until soft, next add the tofu, carrot and pine nuts, season and continue to fry for a few more minutes. Next add the kale, plenty of cracked black pepper, a splash more olive oil and continue to fry for about 5 more minutes until cooked and slightly charred on the edges. Then mix with the rice and serve.
