Cubetti hotpot

I always want more potatoes with my hotpot, so this is my solution, cut them into squares and pile them high. This also makes the recipe much easier and way less fiddly. Then, to get this dish under £1 I swapped stewing beef for minced beef and now the whole thing is ready in a fraction of the time too.

Ingredients

  • ½ onion, sliced

  • 125g beef mince

  • 1 garlic clove, sliced

  • ½ a tin of chopped tomatoes

  • 1 beef stock cube

  • 1 potato, cubed

  • Pinch of oregano

  • Salt & pepper

  • Olive oil

Recipe

Preheat your oven to 190c

Grab an ovenproof frying pan (or transfer to an overproof dish just before cooking in the oven) and fry the onion in a splash of olive oil over a medium heat for a few minutes until softened. Next, add the minced beef, season and continue to fry until cooked through and nicely browned, adding the garlic about half way through. Pour in the chopped tomatoes and crumble in the stock cube, then simmer for about 5 minutes until reduced. Top with cubed potatoes, drizzled in olive oil, season with salt, pepper and oregano, then cook for about 35 minutes in the oven until the potatoes are golden brown.
