Golden Broccoli Noodles

This is a sweet and sticky noodle dish that compliments the sharp twist of lime and fiery dried chillies perfectly. Try and undercook the broccoli ever so slightly to give a little bit of extra crunch along with the nuts.

To Make 1 Portion

  • 1 nest dried wholewheat noodles

  • A few tenderstem broccoli

  • 1 clove garlic, crushed

  • Pinch of chilli flakes

  • 1 tbsp golden syrup

  • 1 tbsp soy sauce

  • ¼ lime

  • Pinch of sesame seeds

  • Handful of crushed salted peanuts

  • Sesame oil

  • Salt

To Cook

Bring a saucepan of salted water to the boil and cook the noodles as per the instructions on the packet.

Meanwhile, pan fry the broccoli for a minute or two in a splash of sesame oil over a medium heat. Then add the garlic and chillies and continue to fry for another minute. Add the golden syrup, along with a tablespoon of sesame oil, a tablespoon of soy sauce, reduce the sauce slightly for a minute and then add the noodles. Mix everything together then serve with a squeeze of lime, a sprinkle of sesame seeds and some crushed peanuts.
