Sauteed Mushroom couscous

Pan fried mushrooms have this gorgeous nutty flavour and dark colour that goes so well with red onions and spinach to create a more wintery vibe. Here I have added couscous to create a lovely one pan meal with very minimal effort but maximum impact on the plate.

Ingredients

  • Handful of mushrooms, sliced

  • ½ red onion, sliced

  • Handful of spinach

  • 1 egg cup of couscous

  • 1 egg cup of water

  • Salt & pepper

  • Olive oil

Recipe

Pan fry the mushrooms and red onions together in a splash of olive oil over a medium heat. After about 10 mins once the mushrooms are dark in colour, add the spinach, a splash more oil, season with salt and pepper and wilt in the pan for a minute. Remove from the heat, and while the pan is still hot, throw in the couscous, then the water, give it a quick stir and leave the pan to rest for a few minutes, while the couscous plumps up.
