Lamb Samosa

These are my quick and healthy no-fry lamb samosas. By using filo pastry and oven baking them, you get an amazing crunchy outside but without the need for any oil.

Ingredients

  • ¼ red onion, diced

  • ½ potato, cut into small cubes

  • ½ carrot, cut into small cubes

  • Small handful of lamb mince

  • 1 tsp curry powder

  • Small handful of peas

  • A few sheets of filo pastry

  • Splash of milk

  • Olive oil

  • Salt & pepper

Recipe

Pre-heat your oven to 190°c.

Season and pan fry the onion, potato and carrot in a splash of oil over a medium heat, then after a few minutes, add the lamb and curry powder.

Meanwhile, defrost the peas under a warm tap, and when the potatoes are soft and lamb is nicely browned, stir in the peas.

Next, cut a long rectangular piece of filo pastry and using my template, wrap the filling in the pastry and brush with milk before baking in the oven for about 15 minutes until golden brown.
