Cumin Spiced Chickpeas & Spinach

This dish has a big moroccan influence, and transforms these pretty normal ingredients into a hot and spicy treat. With the addition of the egg, I’ve created this dish to be a great alternative to a boring brunch.

Ingredients

  • ½ tin chickpeas, drained

  • 1 handful of spinach

  • 1 tsp cumin

  • 1 tsp hot paprika

  • 1 egg

  • Olive oil

  • Salt & pepper

Recipe

In a frying pan, over a medium heat, add the chickpeas, a glug of olive oil, cumin, paprika and a pinch of salt & pepper. Cook for 2 minutes and then add the spinach. Continue to cook for a further minute and once the spinach has wilted, set to one side while you fry an egg.

Serve the egg with the spiced chickpeas and then finish by drizzling over some of the cumin and paprika infused olive oil from the pan.
