Cherry Tomato & Cheddar Square

By using a base of mature cheddar cheese and then oven roasting these tomatoes with olive oil, salt and pepper, this tart packs a powerful flavour punch. It sort of tastes like pizza but with twice the intensity of flavour. If you are taking this tart in a packed lunch or picnic, then a great idea is to cut the base to exactly the size of your lunchbox.

Ingredients

  • 15cm x 15cm square of puff pastry

  • A few slices of red onion

  • 8 cherry tomatoes, halved

  • Small handful of mature cheddar, grated

  • Pinch of oregano

  • Pepper

Recipe

Pre-heat your oven to 190°c.

Lightly score a 1cm border and repeatedly prick the inside square with a fork. Lay a few slices of red onion on the puff pastry and then sprinkle over the cheese. Toss the tomatoes in a bit of olive oil, salt and pepper then position them evenly over the tart. Finnish with a sprinkle of oregano and cook in the oven for about 25 minutes until the cheese is bubbling and the pastry is golden brown.
